On World Vegan Day, Dubai’s One Life Kitchen & Cafe shares their recipe for the Alfalfa Romeo sandwich with livehealthy.ae readers. It is the Dubai Design District eatery‘s best seller, and it is no average sandwich — vegan or otherwise.

The Alfalfa Romeo Sandwich

Ingredients (makes 1 portion)

For the pesto

  • 30g Kale
  • 10g Almonds
  • 80ml Olive oil
  • 5g Garlic

For the Hummus

  • 1 Large beetroot
  • Juice from 1 lemon
  • 410g Canned chickpea drained
  • 30ml Tahini
  • Pinch of salt
  • Pinch of pepper

For the filling

  • 50g Butternut
  • 40g Carrots
  • 30g Zucchini
  • 45g Capsicum
  • 50g Avocado
  • 15g Alfalfa Sprouts
  • 30ml Balsamic vinegar
  • 5g Madras curry powder
  • 2g Fresh Oregano
  • Sourdough Bread

Method

The Pesto

  1. Put all the ingredients in a blender and pulse until all the ingredients are combined, you looking for a chunky consistency.

The Hummus

  1. Rub your beets with oil and wrap in aluminum foil, roast in the oven for 40 mins at 180 degrees. Remove the beets and allow to cool, remove skin from the beets and roughly chop.
  2. In a food processor, blend all the ingredients together until a smooth paste forms.

The Fillings

  1. Slice the butternut length way and place slices on a baking sheet. Drizzle with balsamic, oregano and roast in the oven for 15 minutes at 200 degrees Celsius.
  2. Rub the capsicum with oil and roast for 20 minutes, remove from the oven and allow to cool; rub the skin off with your finger and slice in large strips.
  3. Peel and julienne the carrots, transfer to a bowl and toss with olive oil and the curry powder.

The Assembly

  1. Place 1 slice of bread on a board and spread with the pesto, layer the remaining ingredients on the slice of bread except for the hummus and alfalfas.
  2. On the other slice of bread spread it with the hummus and top with the alfalfa sprouts.
  3. Close the the sandwich and serve.
