Check out this Middle Eastern-inspired recipe from Chef Naima of Tagine Restaurant at Dubai’s One&Only Royal Mirage for the month of Ramadan. It is easy to prep and can be cooked in just under two hours, making it perfect for iftar. 

Ingredients

  • Batch one

2 kg whole chicken

30 g chopped garlic

800 g chopped onion

20 g dried coriander

20 g fresh chopped parsley

30 g ginger powder

20 g salt

20 g white pepper 

40 g smen (Substitute: ghee)

1 g saffron

1 liter chicken stock

  • Batch two

150 g preserved lemon wedges

100 g green olives

100 g fresh tomato sliced

Preparation:

  1. Marinate the chicken for 1 hour with olive oil, onion, coriander, parsley, saffron, smen or ghee, salt, pepper and ginger powder.
  2. Start cooking the marinated chicken in a tagine (or glass/ceramic oven dish) for 45 minutes at 180°C and add the chicken stock.
  3. Check the seasoning, adjust if necessary and add batch two. Continue cooking for another 10 minutes.
  4. The Chicken Tagine Makful is ready to be served.
