Thank you Best Body Co, for sharing this recipe for yummy, no-guilt pancakes. The banana nut pancakes are part of the meal plan provided to participants in its new hardcore 6-in-4 challenge: Lose six kilograms in four weeks, and don’t pay the Dh999 fee.
The challenge runs throughout October under the supervision of the company’s founders, Adam and Olivia McCubbin.
And now for the banana nut pancakes:
Prep time – 5 minutes
Cook time – 10 minutes
Total time – 15 minutes
Serves – 1
• 1 banana
• 1 tablespoon of unsweetened almond or cashew butter
• 4 egg whites
• Cinnamon powder to taste
• Sea salt to taste
• Stevia powder to taste
• Coconut oil spray
• 1/2 cup of mixed berries
1. In a medium-large bowl, mash the banana with a fork until soft. Then add all other ingredients (except the berries, which are for the topping) and mix well together until you get a creamy batter consistency.
2. Lightly spray coconut oil onto a frying pan on medium-high heat and pour the batter over in small dollops to make multiple small pancakes. Cook for 3-4 minutes until the top starts to bubble then flip over and cook to brown the other side.
3. Top with berries if preferred.
